RED CURRY WITH CHICKEN

Red Curry Paste, aromatic spices, rich flavor, can be used in different dishes such as Red Pork Curry and Salmon in Red Curry Sauce.

INGREDIENTS

  • 100 g Chicken.
  • 1 cup Coconut milk.
  • 3-4 Eggplants.
  • 4-5 Basil Leave.
  • 2 tbsp. Red curry paste.
  • 2 Red goat pepper.
  • 1 tbsp. Fish sauce.
  • 1 cup of Stock.
  • Palm sugar.
  • Oil.

METHOD

STEP 1 : Heat a pot in the oil. Then stir-fried red curry paste with low heat.

STEP 2 : Gradually add the coconut milk. Simmer with red curry paste and then put all coconut milk down.

STEP 3 : Pour stock down and simmer until dry out about 1/4. Then add chicken and heat until cooked.

STEP 4 : Taste and season with fish sauce, sugar. Then put eggplant, basil.

STEP 5 : Sprinkle with red goat pepper and fresh basil. Ready to serve.
